Hey, everyone.

I’ve made a riff on this meal a bunch of times, and it’s quickly becoming a favorite. It’s sort of a Mexican take on shakshuka or uovo in purgatorio, and it works for basically any meal of the day.

I was craving these flavors this weekend, but I was limited to what I had in my pantry at the time. I managed to whip this up as a one-pan meal using just the basics, and I was super happy with it.

What I also love about this dish is that it leaves a lot of room for improvisation based on what you’ve got in your pantry. I used chipotle powder and cumin as the main flavorings, but you could use any chile powder, along with things like black pepper, garlic powder, and onion powder. Any fresh herbs will work on top, as will almost any crumbly cheese— feta, cotija, queso fresco, and cheddar are all great options.
