These look amazing. We cook sweet potatoes a few times a week, one of my fave staples.
Do you always remove the skin? I tend to keep it on but curious to understand your preference.
It's really just personal preference. Sometimes when I'm just roasting them I keep the skins. But with this technique I've found the skins get really papery if you boil then roast so I just remove them!
